Quick snack or lunch with leftover Chapathi, and ingredients at home
Mozzarella Cheese – quarter to half cup depending on liking
Onion finely chopped – 1 tablespoon
Tomato finely chopped - 2 tablespoons
Spinach – ½ cup
Some Coriander leaves finely chopped
Pepper flakes – ½ tablespoon
Butter – as needed for toasting
Salt as required
Beat egg, add salt and pepper flakes to it.
In a skillet on medium head add little butter and pour the egg mixture, spread to the size of Chapathi.
Place one Chapathi on top of egg immediately and flip it.
Spread cheese, onion, spinach, coriander leaves and tomatoes, then place another Chapathi on it, spread some butter.
On low to medium heat, toast both sides till crispy and cheese is melted.
