This is a delicious and healthy dish, quick to make if have left over chapathi.
  • Oil: 3 tbsp
  • Chapathi: 6 cut to pieces
  • Onion: 1/2 cup, finely chopped
  • Tomato: 1/3 cup, finely chopped
  • Carrot: 1/3 cup, finely chopped
  • Beans: 1/3 cup, finely chopped
  • Cabbage: 1/3 cup, shredded
  • Paneer: 2 tbsp, grated - Optional
  • Curry leaves: few
  • Coriander: 2 tbsp, finely chopped
  • Ginger garlic paste: 1/2 tsp
  • Garam Masala: 1/2 tsp
  • Turmeric: 1/4 tsp
  • Chilli powder: 1/2 tsp
  • Eggs: 2 Optional
  • Salt: as required

  1. Heat oil in a pan on medium heat. Once oil is hot, add onions, curry leaves and cook until onions are soft. Add ginger garlic paste, mix well and sauté for further 2 minutes till raw smell is gone from ginger garlic paste.
  2. Now add beans, carrots, cabbage, potato, sauté well and cook until vegetables are half done.
  3. At this point, add tomato and grated paneer (optional), sauté and cook for 2-3 minutes or until tomato starts to soften. 
  4. If you are adding eggs, scramble them separately in a pan and add at this time.
  5. Add turmeric powder, chilli powder, garam masala, salt. sauté for a minute, serve hot.
