This is a delicious and healthy dish, quick to make if have left over chapathi. INGREDIENTS
Oil: 3 tbsp
Chapathi: 6 cut to pieces
Onion: 1/2 cup, finely chopped
Tomato: 1/3 cup, finely chopped
Carrot: 1/3 cup, finely chopped
Beans: 1/3 cup, finely chopped
Cabbage: 1/3 cup, shredded
Paneer: 2 tbsp, grated - Optional
Curry leaves: few
Coriander: 2 tbsp, finely chopped
Ginger garlic paste: 1/2 tsp
Garam Masala: 1/2 tsp
Turmeric: 1/4 tsp
Chilli powder: 1/2 tsp
Eggs: 2 Optional
Salt: as required
INSTRUCTIONS
Heat oil in a pan on medium heat. Once oil is hot, add onions, curry leaves and cook until onions are soft. Add ginger garlic paste, mix well and sauté for further 2 minutes till raw smell is gone from ginger garlic paste.
Now add beans, carrots, cabbage, potato, sauté well and cook until vegetables are half done.
At this point, add tomato and grated paneer (optional), sauté and cook for 2-3 minutes or until tomato starts to soften.
If you are adding eggs, scramble them separately in a pan and add at this time.
Add turmeric powder, chilli powder, garam masala, salt. sauté for a minute, serve hot.
