
This is a traditional healthy low carb snack.
INGREDIENTS
Oil: as needed
Ragi flour: 2 cups slightly roasted.
Drumstick leaves: 1 cup cleaned and separated from steams.
Onion: 1 cup, finely chopped
Green chilies: 2 finely chopped.
Curry leaves: few chopped.
Cilantro: 2 tbsp, finely chopped
Ginger shredded: 1tsp
Salt: as required
INSTRUCTIONS
Preparation.
In a medium size bowl mix Ragi flour, drumstick leaves, onion, green chilies, curry leaves, cilantro, ginger and salt till it is mixed well, then add water to it till it forms thick consistency of vada batter, it should not be too thick or too runny, as it needs to be spread on a tawa with your hand.
Let this mixture rest for 30 minutes.
Making Adai
» Divide the mixture and make big lemon size balls and set aside.
» Heat some oil in a tawa on medium.
» Once oil is hot, reduce heat to low, place the prepared ragi ball in the middle of the tawa and spread it thin using your hand, dip hand in water if sticky. Alternatively, you can spread on a greased banana leaf or a plastic sheet/ bag and then transfer to pan.
» Sprinkle some oil on top and cover with lid.
» Cook on medium heat for 3 minutes, then flip and cook for another 2 to 3 minutes. It is important to cook on medium heat else inside will not get cooked well.
Enjoy it hot!
Can be served with coconut chutney.
