This is a no carb lemon rice made with frozen store bought cauliflower rice. 

INGREDIENTS
Oil: 3 tbsp
Cauliflower rice -  16 oz package frozen
Onion: 1cup, finely chopped
Green chilies – 4 slit
Curry leaves: few
Cilantro: 2 tbsp, finely chopped
Ginger – 1 tbsp shredded fine
Peanuts – roasted ½ cup
Turmeric: 1/4 tsp
Lemon juice – 3 tbsp
Salt: as required
For tadka – Mustard seeds 1 tsp, Chana dhal 1 tbsp, urad dhal 1 tbsp


INSTRUCTIONS
Heat oil in a pan on medium heat. 
Once oil is hot, add all the tadka stuff, once that is golden brown add onion, shredded ginger and chili.
Sauté until golden, add roasted peanuts, curry leaves and salt.
Mix well for a minute, then add lemon juice and let the mixture boil for 2 min.
Add turmeric to this mixture, then add the frozen cauliflower rice and stir fry for 5 minutes on high heat.
This will remove all the water content from the cauliflower rice. 

This tastes just like traditional lemon rice.

Garnish with cilantro and enjoy!.
