This is a delicious recipe, can be had for breakfast or as dessert.
» Well ripe bananas – 4
» Sugar – 1.5 cup
» All-purpose flour – 3 cups
» Eggs – 2
» Vanilla extract – 1 tsp
» Baking powder – 1 tsp
» Baking soda – 1/2 tsp
» Oil (use oils with no flavor) – 4 tbsps
» Salt – a pinch
» Walnuts (Optional) – About 15 broken into pieces
Mash bananas well, blend in a blender will work well.
If sugar is granular, powder sugar in a blender as well.
Preparing for Baking
In a large bowl add eggs and whisk well, add oil, mashed bananas and sugar to that and mix thoroughly.
To this mixture add flour and beat till there are no lumps and the mixture is a fine paste.
Then add Salt, Vanilla extract, Baking soda and Baking powder and mix well.
If are using walnuts, add them to the mix now.
Pour into well-greased pans, two loaf pans, big bundt pan or one 9 x 13 pan.
Bake at 350 degrees for approximately 45 minutes, this time depends on the oven, test by inserting a toothpick, it should come out clean.
